What is brining and what does it do for the turkey?

Answer:

Brining is soaking the whole fresh turkey in salted water for a few hours before roasting. It enhances the flavor and helps retain moisture. The basic ratio for brining is 1 1/2-2 cups kosher salt per gallon of water for approximately 4 hours. But don't stop there - you can also add wine, broth, fresh cranberries or fruits to the brine to enhance the flavor.
