- 1pound crab meat - lump and shred
- 1/4 cup mayonnaise
- 1 each brown egg
- 1 each lemon - zested and juiced
- 1 tablespoon Italian parsley
- salt and pepper
Whisk the mayonnaise, egg, lemon and parsley together and then gently fold in the crab. Bake in a muffin mold that has been sprayed with non-sticky stuff in a 350 degree oven for about 12 minutes or until crispy golden brown. Let cool for about 10 minutes and pop out your little bundles of crab love. Serve with aioli or cocktail sauce.
