Our wine cellars not only keep your collection in view, but out of harm. “Cellars are important because they create an environment that’s going to keep those wines in an ideal environment,” says Tracy Brynes, lead Wine Educator at Flowers Winery in Healdsburg, California. Piling them into the refrigerator with your vegetables might be ok in a pinch, but your vints deserve better.

Some wine preservation tips: Different wines need different care. There are some key fundamentals, though. “Arming yourself with some knowledge of the window of drinking opportunity for that wine is important,” Brynes says. First, of course, there’s climate. “You want to have a steady, consistent temperature,” she says, “anywhere between around 50 and 59 degrees Fahrenheit.” In terms of wine storage temperature, you might want to keep a crisp white cooler, say, than a robust red. That’s why Dacor builds dual temperature zones into each cellar, with independent controls customizable via an intuitive touch control panel. That interface also controls the interior’s full-surround LED 3D Lighting which carefully illuminates the bottles without heat gain. “You definitely want to keep the wine away from sunlight that can heat up the wine,” she says. Second is storage. “Some people just put a little shelf on top of their refrigerator for easy access,” Brynes says, “but you really want to keep vibrations away, which agitate the wine.” The SteelCore™ interior of Dacor’s cellar is free of such disturbances, while its Glide Rack™ offers smooth access to bottles on oak wood wine racks. And those bottles really do need to lie down. “You want to keep the bottle on its side, because you want to have the wine in contact with the cork,” she says. “If you don’t, the cork will dry out which allows air to get into that bottle, and the wine will oxidize.”

Often, nowadays, vineyards are sealing their bottles with screw caps. “These technically can be stood on their end,” she notes. “But the majority of these are really intended to be consumed at a younger age, not aged over time.” A bottle for tonight, in other words, and the fridge—not for tomorrow. Since Dacor’s cellar stores more than forty bottles, though, it can easily accommodate both screw cap wine storage among its wine storage solutions.
